I'm in the process of figuring out how to best tweak the mental ray fast skin shader as well - there are some tutorials you could find online (I have written ones) and I just watched Sze Jones's video (Gnomon Master Class) on Basic Skin Setup and she explains it really well. There's a lot of test rendering you have to do to get the right look. I have yet to try it. Thanks very much again~
